An artisanal pandorato is a large leavened cake for special occasions that combines the elegance of pandoro with the richness of panettone, standing out for its soft texture and extremely buttery flavor.
It features the classic tall star shape , with a golden, velvety surface that releases intense aromas of butter, natural vanilla, and fresh milk. The dough, bright yellow thanks to the generous use of egg yolks, is silky, very light, and highly airy , obtained through a long natural leavening process with sourdough starter and slow, careful processing.
Unlike panettone, pandorato is free of candied fruit and raisins , highlighting the purity of the dough and the quality of the ingredients. The flavor is enveloping yet balanced, with notes of centrifuged butter, honey, and Bourbon vanilla, and a sweetness that's never overpowering.
The production process is entirely artisanal: multi-stage kneading, delicately rounded, and upside-down cooling to maintain a soft, stringy texture. The product is preservative-free , highly digestible, and characterized by a melt-in-the-mouth texture.
Perfect enjoyed plain with a dusting of icing sugar, or accompanied by light creams, hot chocolate, or sweet dessert wines.
