A classic artisanal Colomba is a large leavened Easter cake made exclusively by hand, over a long period of time, and using the highest quality raw materials.
It stands out for its traditional dove shape , with well-defined wings and a surface covered with a crunchy almond glaze, decorated with whole almonds and granulated sugar. When baked, it forms a fragrant crust that contrasts pleasantly with the soft interior.
The dough, a deep, natural yellow thanks to the fresh egg yolks, is soft, stringy, and full of irregular bubbles, a sign of a long natural leavening process with sourdough starter, which can last over 30 hours. The aroma is elegant and persistent, with notes of centrifuged butter, natural vanilla, and citrus zest.
Inside are cubes of artisanal candied orange , soft and aromatic, evenly distributed. The flavor is balanced, sweet but not cloying, very light and easily digestible, free from preservatives and additives.
The production follows traditional methods: multi-stage kneading, manual shaping, hand glazing and upside-down cooling, essential for maintaining a high and soft structure.
Ideal enjoyed plain, in generous slices, or accompanied by light creams, an aromatic passito wine, or a sweet dessert wine.
