A classic artisanal panettone is a leavened baked product from high-quality pastry, made using traditional methods and select raw materials.
It features the typical tall dome shape , covered with a golden, slightly cracked crust that releases an intense aroma of butter, natural vanilla, and candied citrus. The dough, a warm yellow color thanks to the use of fresh eggs, is extremely soft, stringy, and airy , the result of a long natural leavening process with sourdough starter that can last more than 36 hours.
Inside are soft sultanas and evenly distributed candied orange and citron cubes . The flavor is balanced: sweet but not cloying, with aromatic notes of honey, high-quality butter, and Bourbon vanilla.
The production process is entirely manual: from kneading to rounding to cooling by hand, a crucial step for maintaining the soft texture. The result is a preservative-free product with a light texture and high digestibility.
Perfect enjoyed in thick slices, plain or slightly warm, perhaps accompanied by a mascarpone cream or a sweet wine.
